  • Cinnamon powder - 1/2 teaspoon

  • Salt - a pinch
  • Vegetable oil - 2 tablespoons
  • Grated coconut (unsweetened) - 30g

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small cake pan.
  2. Peel and boil the sweet potato in water until tender, about 15-20 minutes. Drain and let it cool slightly.
  3. In a mixing bowl, mash the sweet potato until smooth.
  4. Add sugar, vegetable oil, coconut milk, vanilla extract, and salt to the mashed sweet potato and mix well.
  5. In another bowl, combine all-purpose flour, baking powder, cinnamon powder, and grated coconut.
  6. Gradually incorporate the dry ingredients into the sweet potato mixture until well combined.
