  • ripe bananas - 2 medium (about 250g)
  • whole wheat flour - 100g
  • rolled oats - 50g
  • honey or maple syrup - 50ml
  • coconut oil - 30ml
  • baking powder - 1 teaspoon
  • baking soda - 1/2 teaspoon
  • cinnamon - 1 teaspoon
  • vanilla extract - 1 teaspoon
  • salt - a pinch
  • eggs - 2 large

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs, honey or maple syrup, coconut oil, and vanilla extract to the mashed bananas, and mix well.
  4. In a separate bowl, combine whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  5. Gradually stir the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
