- ripe bananas - 2 medium
- all-purpose flour - 150 grams
- brown sugar - 50 grams
- baking powder - 1 teaspoon
- baking soda - 1/2 teaspoon
- cinnamon powder - 1/2 teaspoon
- plant milk (almond or soy) - 100 ml
- coconut oil - 2 tablespoons (melted)
- vanilla extract - 1 teaspoon
- walnuts (chopped) - 30 grams (optional)
Steps
- Preheat your oven to 180°C (350°F) and grease a small loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the melted coconut oil, plant milk, and vanilla extract to the mashed bananas, mixing well.
- In another bowl, combine the all-purpose flour, brown sugar, baking powder, baking soda, and cinnamon powder.
- Gradually fold the dry ingredients into the wet banana mixture until just combined. Be careful not to overmix.
- If using, fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once done, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
