Ingredients

  • ripe bananas - 2 medium
  • all-purpose flour - 150 grams
  • brown sugar - 50 grams
  • baking powder - 1 teaspoon
  • baking soda - 1/2 teaspoon
  • cinnamon powder - 1/2 teaspoon
  • plant milk (almond or soy) - 100 ml
  • coconut oil - 2 tablespoons (melted)
  • vanilla extract - 1 teaspoon
  • walnuts (chopped) - 30 grams (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the melted coconut oil, plant milk, and vanilla extract to the mashed bananas, mixing well.
  4. In another bowl, combine the all-purpose flour, brown sugar, baking powder, baking soda, and cinnamon powder.
  5. Gradually fold the dry ingredients into the wet banana mixture until just combined. Be careful not to overmix.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once done, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
