  • Honey or maple syrup - 3 tablespoons
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish.
  2. In a large bowl, combine the grated cassava, coconut milk, honey (or maple syrup), eggs, baking powder, vanilla extract, and salt.
  3. Mix the ingredients well until you have a smooth batter.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
