Ingredients

  • Mandioca (cassava) - 300 grams
  • Parmesan cheese, grated - 50 grams
  • Garlic, minced - 1 clove
  • Green onions, chopped - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil (for frying) - 120 ml

Steps

  1. Peel the mandioca and cut it into chunks. Boil in salted water for about 20 minutes or until tender.
  2. Drain the mandioca and let it cool slightly. Mash it in a bowl until smooth.
  3. Add the grated Parmesan cheese, minced garlic, chopped green onions, chopped cilantro, egg, salt, and black pepper to the mashed mandioca. Mix until well combined.
  4. Shape the mixture into small balls or patties, about 3 cm in diameter.
  5. Heat the olive oil in a frying pan over medium heat. Fry the bolinhos in batches until golden brown and crispy, about 3-4 minutes on each side.
  6. Remove from the pan and drain on paper towels. Serve warm.
