Bolinhos de Mandioca

Ingredients
- Mandioca (cassava) - 300 grams
- Parmesan cheese, grated - 50 grams
- Garlic, minced - 1 clove
- Green onions, chopped - 2 tablespoons
- Cilantro, chopped - 2 tablespoons
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil (for frying) - 120 ml
Steps
- Peel the mandioca and cut it into chunks. Boil in salted water for about 20 minutes or until tender.
- Drain the mandioca and let it cool slightly. Mash it in a bowl until smooth.
- Add the grated Parmesan cheese, minced garlic, chopped green onions, chopped cilantro, egg, salt, and black pepper to the mashed mandioca. Mix until well combined.
- Shape the mixture into small balls or patties, about 3 cm in diameter.
- Heat the olive oil in a frying pan over medium heat. Fry the bolinhos in batches until golden brown and crispy, about 3-4 minutes on each side.
- Remove from the pan and drain on paper towels. Serve warm.
