Ingredients

  • Black beans - 200 grams, cooked and drained
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat flour - 50 grams
  • Olive oil - for frying

Steps

  1. In a mixing bowl, mash the cooked black beans with a fork until slightly smooth but still chunky.
  2. Add the chopped onion, minced garlic, cilantro, cumin, paprika, salt, and black pepper to the mashed beans. Mix well until all ingredients are combined.
  3. Sprinkle the whole wheat flour into the mixture and stir until the flour is fully incorporated, forming a thick batter.
  4. Heat a skillet over medium heat and add enough olive oil to cover the bottom of the pan.
  5. Once the oil is hot, scoop tablespoon-sized portions of the batter and carefully drop them into the skillet, flattening them slightly.
  6. Fry the bolinhos for about 3-4 minutes on each side or until they are golden brown and crispy.
  7. Remove from the skillet and place on paper towels to drain excess oil. Serve hot.
