Ingredients

  • Cassava (Mandioca) - 250 grams, peeled and cut into chunks
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Baking powder - 1/2 teaspoon
  • Rice flour - 50 grams
  • Vegetable oil - for frying

Steps

  1. In a pot, bring water to a boil and add the cassava chunks. Cook until tender, about 20 minutes.
  2. Drain the cassava and let it cool slightly before mashing it until smooth.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.
  4. In a bowl, combine the mashed cassava, sautéed garlic and onion, chopped parsley, salt, black pepper, baking powder, and rice flour. Mix until well combined.
  5. Shape the mixture into small balls or patties, about the size of a golf ball.
  6. In a deep pan, heat vegetable oil over medium heat for frying. Carefully add the bolinhos to the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the bolinhos from the oil and drain on paper towels. Serve hot.
