Ingredients
- Cassava (Mandioca) - 250 grams, peeled and cut into chunks
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Baking powder - 1/2 teaspoon
- Rice flour - 50 grams
- Vegetable oil - for frying
Steps
- In a pot, bring water to a boil and add the cassava chunks. Cook until tender, about 20 minutes.
- Drain the cassava and let it cool slightly before mashing it until smooth.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.
- In a bowl, combine the mashed cassava, sautéed garlic and onion, chopped parsley, salt, black pepper, baking powder, and rice flour. Mix until well combined.
- Shape the mixture into small balls or patties, about the size of a golf ball.
- In a deep pan, heat vegetable oil over medium heat for frying. Carefully add the bolinhos to the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the bolinhos from the oil and drain on paper towels. Serve hot.
