Ingredients

  • Black beans - 200 grams (cooked and drained)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 2 tablespoons (chopped)
  • Cornmeal - 50 grams
  • All-purpose flour - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Heat a small skillet over medium heat and add a splash of oil. Sauté the chopped onion and minced garlic until softened and fragrant, about 3-4 minutes.
  3. Add the sautéed onion and garlic mixture to the mashed beans, followed by the chopped cilantro, cornmeal, flour, baking powder, salt, black pepper, and paprika. Mix until combined.
  4. Form small balls (about 2.5 cm in diameter) from the mixture and place them on a plate.
  5. In a deep pan, heat vegetable oil over medium heat until hot (about 180°C).
  6. Carefully add the bean balls to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side.
  7. Remove the fried bolinhos and place them on paper towels to drain excess oil. Serve warm.
