Ingredients

  • Potatoes - 300 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Chickpea flour - 50 grams
  • Olive oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Turmeric - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 50 ml

Steps

  1. Peel and boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
  2. In a large mixing bowl, mash the boiled potatoes until smooth.
  3. Add the chopped onion, minced garlic, chopped parsley, chickpea flour, olive oil, black pepper, salt, turmeric, baking powder, and water to the mashed potatoes. Mix until well combined.
  4. Heat a non-stick skillet over medium heat and add a little olive oil for frying.
  5. Using your hands, form small patties from the potato mixture, about 5 cm in diameter.
  6. Fry the patties in the skillet for about 4-5 minutes on each side, or until golden brown and crispy.
  7. Remove from the skillet and let them cool on a paper towel to absorb any excess oil.
  8. Serve warm, optionally with a side of vegan mayo or salsa.
