Bolinho de Batata

Ingredients
- Potatoes - 300 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Chickpea flour - 50 grams
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Turmeric - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Water - 50 ml
Steps
- Peel and boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
- In a large mixing bowl, mash the boiled potatoes until smooth.
- Add the chopped onion, minced garlic, chopped parsley, chickpea flour, olive oil, black pepper, salt, turmeric, baking powder, and water to the mashed potatoes. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a little olive oil for frying.
- Using your hands, form small patties from the potato mixture, about 5 cm in diameter.
- Fry the patties in the skillet for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let them cool on a paper towel to absorb any excess oil.
- Serve warm, optionally with a side of vegan mayo or salsa.
