- Salted codfish - 150g
- Almond flour - 50g
- Egg - 1 large
- Green onion - 2 tablespoons, chopped
- Parsley - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Soak the salted codfish in water for 24 hours, changing the water 2-3 times to remove excess salt.
- After soaking, drain and rinse the codfish, then boil it in fresh water for about 10 minutes until cooked. Remove from heat and let it cool.
- Flake the cooked codfish into small pieces, removing any bones and skin.
- In a mixing bowl, combine the flaked codfish, almond flour, egg, green onion, parsley, minced garlic, and black pepper. Mix well until a dough-like consistency forms.
- Heat olive oil in a frying pan over medium heat.
- Using a spoon, scoop the mixture and shape it into small patties, then carefully place them in the hot oil.
- Fry the patties for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the pan and place them on a paper towel to drain excess oil.
- Serve warm, optionally with a side of avocado or a fresh salad.
