  • Eggs - 2 large
  • Parmesan cheese - 50 grams, grated
  • Chopped green onions - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the grated cassava, eggs, grated Parmesan cheese, chopped green onions, garlic powder, salt, and black pepper.
  2. Mix the ingredients thoroughly until a uniform batter forms.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  4. Once the oil is hot, scoop about 2 tablespoons of the batter into the skillet, flattening it slightly to form a fritter.
  5. Cook each bolinho for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel to absorb excess oil. Repeat with the remaining batter.
  7. Serve warm, optionally garnished with extra Parmesan or green onions.
