Steps

  1. In a pot, boil the cassava in salted water for about 15-20 minutes until tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and red bell pepper, cooking for an additional 3-4 minutes until softened.
  4. Stir in the sliced mushrooms and cook until they release their moisture, about 5 minutes.
  5. Add the diced tomato, paprika, black pepper, and salt. Cook for another 5 minutes, stirring occasionally.
  6. In a blender, combine the cooked cassava and coconut milk. Blend until smooth and creamy.
  7. Pour the cassava mixture into the skillet with the mushroom mixture. Add the vegetable broth and lime juice, stirring to combine.
  8. Allow the dish to simmer for about 10 minutes, stirring occasionally, until everything is heated through and well combined.
  9. Remove from heat and stir in the chopped cilantro before serving.
