Ingredients

  • Short ribs - 600 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 1 tablespoon, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili flakes - ½ teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine minced garlic, olive oil, chopped rosemary, lemon juice, salt, black pepper, paprika, and chili flakes to create a marinade.
  2. Place the short ribs in a shallow dish and pour the marinade over them, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat the grill to medium-high heat.
  4. Remove the short ribs from the marinade and let excess marinade drip off.
  5. Place the short ribs on the grill and cook for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.
  6. Once cooked, remove from grill and let rest for 5 minutes.
  7. Slice the short ribs between the bones and serve garnished with fresh parsley.
