Ingredients

  • Bife de Chorizo (sirloin steak) - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1/4 cup, chopped
  • Fresh oregano - 1 tablespoon, chopped
  • Red wine vinegar - 1 tablespoon
  • Red chili flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the bife de chorizo from the refrigerator and let it rest at room temperature for about 15 minutes before cooking.
  2. In a small bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, lemon juice, olive oil, and red chili flakes. Mix well to create the chimichurri sauce and set aside.
  3. Season both sides of the steak generously with salt and black pepper.
  4. Heat a skillet or grill pan over medium-high heat and add 1 tablespoon of olive oil.
  5. Once the oil is hot, add the steak to the pan and cook for 4-5 minutes on each side for medium-rare, adjusting time to your preferred doneness.
  6. Remove the steak from the pan and let it rest for 5 minutes before slicing.
  7. Serve the sliced bife de chorizo drizzled with chimichurri sauce.
