- Bife de Chorizo (sirloin steak) - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Fresh oregano - 1 tablespoon, chopped
- Red wine vinegar - 1 tablespoon
- Red chili flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
Steps
- Remove the bife de chorizo from the refrigerator and let it rest at room temperature for about 15 minutes before cooking.
- In a small bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, lemon juice, olive oil, and red chili flakes. Mix well to create the chimichurri sauce and set aside.
- Season both sides of the steak generously with salt and black pepper.
- Heat a skillet or grill pan over medium-high heat and add 1 tablespoon of olive oil.
- Once the oil is hot, add the steak to the pan and cook for 4-5 minutes on each side for medium-rare, adjusting time to your preferred doneness.
- Remove the steak from the pan and let it rest for 5 minutes before slicing.
- Serve the sliced bife de chorizo drizzled with chimichurri sauce.
