- Garlic - 2 cloves, minced
- Fresh parsley - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Red wine vinegar - 2 tablespoons
- Lemon juice - 1 tablespoon
- Red chili flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Asparagus - 100 grams, trimmed
Steps
- Prepare the chimichurri sauce by mixing parsley, cilantro, minced garlic, red wine vinegar, lemon juice, red chili flakes, 1 tablespoon of olive oil, salt, and black pepper in a bowl. Set aside to let the flavors meld.
- Preheat your grill or grill pan over medium-high heat.
- Rub the ribeye steak with the remaining tablespoon of olive oil, and season generously with salt and black pepper.
- Grill the steak for about 5-7 minutes on each side for medium-rare, or to your desired doneness. Use a meat thermometer to check for an internal temperature of 57°C (135°F) for medium-rare.
- While the steak is grilling, toss the zucchini, bell pepper, and asparagus with some olive oil, salt, and pepper in a bowl.
- Add the vegetables to the grill during the last 5-7 minutes of the steak's cooking time, turning occasionally until they are slightly charred and tender.
- Once cooked, let the steak rest for 5 minutes before slicing it against the grain.
- Serve the sliced steak topped with chimichurri sauce and a side of grilled vegetables.
