Ingredients
- 1 medium eggplant - 300g
- 200g ground beef (or ground turkey)
- 1 small onion, diced - 100g
- 2 cloves garlic, minced
- 1 medium tomato, diced - 100g
- 1/2 bell pepper, diced - 50g
- 50g grated cheese (mozzarella or cheddar)
- 2 tablespoons olive oil - 30ml
- 1 teaspoon paprika
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Cut the eggplant in half lengthwise and scoop out the flesh, leaving about 1 cm of the border. Set aside the scooped flesh.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced tomato, bell pepper, scooped eggplant flesh, paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are softened.
- Remove from heat and mix in half of the grated cheese and the chopped parsley.
- Fill the eggplant halves with the meat mixture, pressing it down slightly to pack it in.
- Place the stuffed eggplants on a baking dish and sprinkle the remaining cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
- Remove from the oven, let cool slightly, and serve warm.
