Ingredients

  • 1 medium eggplant - 300g
  • 200g ground beef (or ground turkey)
  • 1 small onion, diced - 100g
  • 2 cloves garlic, minced
  • 1 medium tomato, diced - 100g
  • 1/2 bell pepper, diced - 50g
  • 50g grated cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil - 30ml
  • 1 teaspoon paprika
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the eggplant in half lengthwise and scoop out the flesh, leaving about 1 cm of the border. Set aside the scooped flesh.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the diced tomato, bell pepper, scooped eggplant flesh, paprika, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are softened.
  6. Remove from heat and mix in half of the grated cheese and the chopped parsley.
  7. Fill the eggplant halves with the meat mixture, pressing it down slightly to pack it in.
  8. Place the stuffed eggplants on a baking dish and sprinkle the remaining cheese on top.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
  11. Remove from the oven, let cool slightly, and serve warm.
