  • coconut milk - 100 ml
  • maple syrup - 2 tablespoons
  • vanilla extract - 1 teaspoon
  • oats - 50 grams
  • chopped nuts (like almonds or walnuts) - 30 grams
  • cocoa powder - 1 tablespoon
  • sea salt - a pinch

Steps

  1. In a medium saucepan, combine the coconut milk, maple syrup, and vanilla extract over medium heat. Stir until the mixture is well combined and heated through.
  2. Add the fresh shredded coconut and oats to the saucepan, mixing well until the ingredients are fully combined.
  3. Continue cooking the mixture on low heat for about 10-15 minutes, stirring constantly, until it thickens and pulls away from the sides of the pan.
  4. Remove the pan from heat and let the mixture cool slightly. Once manageable, use your hands to form small balls (about 2-3 cm in diameter).
  5. Roll half of the balls in chopped nuts and the other half in cocoa powder for a delightful finish.
  6. Place the beijinhos on a plate and refrigerate for at least 15 minutes to set before serving.
