- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the grated potatoes, minced garlic, chopped onion, parsley, salt, black pepper, and nutritional yeast (if using). Mix well until all ingredients are evenly combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add half of the potato mixture, pressing it down to form a compact, even layer.
- Cook for about 7-10 minutes, or until the bottom is golden brown and crispy. Carefully flip the rosti using a large plate and add the remaining tablespoon of olive oil to the skillet.
- Slide the uncooked side of the rosti back into the skillet and cook for another 7-10 minutes until golden brown and crispy.
- Once cooked, transfer the rosti to a plate, slice into wedges, and serve warm.
