  • Black beans (cooked) - 150 grams
  • Bell pepper (diced) - 1 medium
  • Onion (chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Tomato (diced) - 1 medium
  • Corn kernels - 100 grams
  • Olive oil - 2 tablespoons
  • Cilantro (chopped) - 2 tablespoons
  • Vegetable broth - 250 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Lime juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced bell pepper and corn, cooking for an additional 5 minutes until slightly softened.
  4. Stir in the diced tomato, cooked black beans, brown rice, salt, black pepper, cumin, and paprika, mixing well.
  5. Pour in the vegetable broth and bring the mixture to a simmer, then remove from heat.
  6. Transfer the mixture to a baking dish and cover it with aluminum foil.
  7. Bake in the preheated oven for 25 minutes.
  8. After 25 minutes, remove the foil and bake for an additional 10 minutes to allow the top to crisp slightly.
  9. Once done, remove from the oven and drizzle with lime juice and sprinkle with chopped cilantro before serving.
