- Onion (chopped) - 1 medium

- Tomato (diced) - 1 medium
- Corn kernels - 100 grams
- Olive oil - 2 tablespoons
- Cilantro (chopped) - 2 tablespoons
- Vegetable broth - 250 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lime juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced bell pepper and corn, cooking for an additional 5 minutes until slightly softened.
- Stir in the diced tomato, cooked black beans, brown rice, salt, black pepper, cumin, and paprika, mixing well.
- Pour in the vegetable broth and bring the mixture to a simmer, then remove from heat.
- Transfer the mixture to a baking dish and cover it with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10 minutes to allow the top to crisp slightly.
- Once done, remove from the oven and drizzle with lime juice and sprinkle with chopped cilantro before serving.
