- Cilantro - 2 tablespoons, chopped

- Paprika - 1 teaspoon

- Lime - 1, juiced
Steps
- Preheat the oven to 180°C (350°F).
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing until soft, about 5 minutes.
- Add the minced garlic, cumin, and paprika, cooking for another minute until fragrant.
- In a large mixing bowl, combine the cooked black beans, brown rice, sautéed vegetables, coconut milk, vegetable broth, salt, and black pepper. Mix well.
- Transfer the mixture to a baking dish, spreading it evenly.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to crisp slightly.
- Once done, remove from the oven and stir in the chopped cilantro and lime juice before serving.
