  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Coconut milk - 100 ml
  • Vegetable broth - 200 ml
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing until soft, about 5 minutes.
  3. Add the minced garlic, cumin, and paprika, cooking for another minute until fragrant.
  4. In a large mixing bowl, combine the cooked black beans, brown rice, sautéed vegetables, coconut milk, vegetable broth, salt, and black pepper. Mix well.
  5. Transfer the mixture to a baking dish, spreading it evenly.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes to allow the top to crisp slightly.
  8. Once done, remove from the oven and stir in the chopped cilantro and lime juice before serving.
