Ingredients
- Long-grain rice - 150 grams
- Black beans (cooked) - 100 grams
- White fish fillets (such as tilapia or cod) - 200 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Bell pepper (chopped) - 1/2 medium
- Tomato (chopped) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Olive oil - 2 tablespoons
- Vegetable broth - 400 milliliters
- Lime (juiced) - 1
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, chopped bell pepper, and tomato. Cook for an additional 3-4 minutes until the vegetables are softened.
- Stir in the cumin, paprika, salt, and black pepper. Cook for 1 minute to release the spices' aroma.
- Add the long-grain rice to the pot and stir to coat with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Meanwhile, season the fish fillets with lime juice, salt, and pepper. In a separate skillet, heat the remaining tablespoon of olive oil over medium heat.
- Add the fish fillets and cook for about 3-4 minutes on each side or until cooked through and flaky.
- Once the rice is done, fluff it with a fork and gently stir in the cooked black beans and chopped cilantro.
- Serve the Baião de Dois topped with the cooked fish fillets and garnish with additional cilantro and lime wedges if desired.
