  • Tomato (chopped) - 1 medium
  • Cilantro (chopped) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Lime (juiced) - 1
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, chopped bell pepper, and tomato. Cook for an additional 3-4 minutes until the vegetables are softened.
  3. Stir in the cumin, paprika, salt, and black pepper. Cook for 1 minute to release the spices' aroma.
