Ingredients
- Salt cod - 200 grams
- Potatoes - 300 grams
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 50 ml
- Black olives - 50 grams, pitted and sliced
- Eggs - 2, hard-boiled
- Milk - 100 ml
- Parsley - 2 tablespoons, chopped
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the salt cod in cold water for 24-36 hours, changing the water several times to remove excess salt.
- Once soaked, drain the cod and place it in a pot with fresh water. Add the bay leaf and bring to a boil. Reduce heat and simmer for about 15-20 minutes until tender. Remove from heat, drain, and let cool.
- Peel and slice the potatoes into thin rounds. In a separate pot, boil the potato slices in salted water for about 10 minutes until just tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the sliced onions and garlic, cooking until the onions are translucent and soft.
- Flake the cooked salt cod into bite-sized pieces, removing any skin or bones. Add the flaked cod to the skillet with the onions and garlic, and mix well. Season with salt and black pepper to taste.
- In a baking dish, layer half of the potato slices on the bottom. Spread half of the cod mixture on top, followed by half of the sliced olives. Repeat the layers with the remaining potatoes, cod, and olives.
- Pour the milk evenly over the top layer and sprinkle with chopped parsley.
- Slice the hard-boiled eggs and arrange them on top of the dish.
- Preheat the oven to 180°C (350°F) and bake for approximately 25-30 minutes, until heated through and slightly golden on top.
