  • Mushrooms - 150 grams, whole or halved
  • Eggplant - 1 medium, sliced
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a large mixing bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper.
  3. Add the sliced zucchini, red and yellow bell peppers, red onion, mushrooms, and eggplant to the bowl. Toss until all vegetables are well coated in the marinade.

  5. Thread the marinated vegetables onto skewers, alternating types for a colorful presentation.
