- Eggplant - 1 medium, sliced
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
Steps
- Preheat your grill or BBQ to medium-high heat.
- In a large mixing bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper.
- Add the sliced zucchini, red and yellow bell peppers, red onion, mushrooms, and eggplant to the bowl. Toss until all vegetables are well coated in the marinade.

- Thread the marinated vegetables onto skewers, alternating types for a colorful presentation.
- Grill the vegetable skewers for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.
