Ingredients

  • Young green jackfruit - 400 grams (drained and rinsed)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium (finely chopped)
  • Garlic - 3 cloves (minced)
  • Bell pepper - 1 medium (diced)
  • Black olives - 50 grams (sliced)
  • Coconut milk - 200 ml
  • Chopped fresh parsley - 2 tablespoons
  • Chopped fresh cilantro - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Cooked white rice - for serving (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced bell pepper to the skillet and cook for another 3-4 minutes until the bell pepper is tender.
  3. Shred the drained jackfruit with your hands or two forks until it resembles pulled meat. Add the shredded jackfruit to the skillet.
  4. Stir in the smoked paprika, turmeric powder, salt, and black pepper. Cook for about 5 minutes, allowing the jackfruit to absorb the flavors.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer. Reduce heat to low and let it cook for another 10 minutes, stirring occasionally.
  6. In the last few minutes of cooking, add the sliced black olives, chopped parsley, and cilantro. Mix well.
  7. Remove from heat and stir in the lemon juice before serving. Enjoy with cooked white rice if desired.
