Ingredients

  • Salted cod - 200g
  • Zucchini - 200g
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Parsley - 2 tablespoons, chopped
  • Black olives - 10, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the salted cod in water for 24 hours, changing the water several times to remove excess salt. After soaking, drain and shred the cod into small pieces.
  2. Using a spiralizer or a grater, spiralize or grate the zucchini into thin strands resembling pasta.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and shredded cod to the skillet, cooking for an additional 3-4 minutes until the cod is heated through.
  5. Stir in the zucchini strands and cook for another 5 minutes until they are tender but still slightly firm.
  6. In a bowl, whisk together the eggs, then pour them over the cod and zucchini mixture in the skillet. Stir gently until the eggs are cooked to your desired consistency.
  7. Season with salt and black pepper to taste, and fold in the chopped parsley and sliced olives.
  8. Serve immediately, garnished with additional parsley if desired.
