Ingredients
- Salted cod - 200g
- Zucchini - 200g
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Eggs - 4 large
- Olive oil - 2 tablespoons
- Parsley - 2 tablespoons, chopped
- Black olives - 10, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the salted cod in water for 24 hours, changing the water several times to remove excess salt. After soaking, drain and shred the cod into small pieces.
- Using a spiralizer or a grater, spiralize or grate the zucchini into thin strands resembling pasta.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and shredded cod to the skillet, cooking for an additional 3-4 minutes until the cod is heated through.
- Stir in the zucchini strands and cook for another 5 minutes until they are tender but still slightly firm.
- In a bowl, whisk together the eggs, then pour them over the cod and zucchini mixture in the skillet. Stir gently until the eggs are cooked to your desired consistency.
- Season with salt and black pepper to taste, and fold in the chopped parsley and sliced olives.
- Serve immediately, garnished with additional parsley if desired.
