Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the diced carrot to the pot and cook for an additional 3 minutes.
- Stir in the rinsed brown rice and lentils, then add the vegetable broth and bay leaf.
