- Long-grain rice - 150 grams
- Water - 400 ml
- Carrot - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Red bell pepper - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Black pepper - to taste
- Salt - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced carrot and red bell pepper to the saucepan, cooking for another 5 minutes until slightly softened.
- Stir in the rice, cumin, turmeric, black pepper, and salt, ensuring the rice is well coated with the spices and vegetables.
- Pour in the water and soy sauce, bringing the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
- After 15 minutes, add the green peas on top of the rice, cover again, and let it steam for an additional 5 minutes.
- Remove from heat, fluff the rice with a fork, and stir in the fresh parsley before serving.
