Ingredients

  • Long-grain rice - 150 grams
  • Water - 400 ml
  • Carrot - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add the diced carrot and red bell pepper to the saucepan, cooking for another 5 minutes until slightly softened.
  4. Stir in the rice, cumin, turmeric, black pepper, and salt, ensuring the rice is well coated with the spices and vegetables.
  5. Pour in the water and soy sauce, bringing the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
  7. After 15 minutes, add the green peas on top of the rice, cover again, and let it steam for an additional 5 minutes.
  8. Remove from heat, fluff the rice with a fork, and stir in the fresh parsley before serving.
