  • Cinnamon stick - 1

Steps

  1. Rinse the Arborio rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, water, coconut milk, sugar, cinnamon stick, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low, cover, and simmer for about 20 minutes, stirring occasionally.
  4. Once the rice is tender and the mixture has thickened to a creamy consistency, remove it from heat.
  5. Stir in the vanilla extract and remove the cinnamon stick.
