Ingredients

  • Jasmine rice - 150g
  • Fresh green beans - 100g, trimmed and cut into 2 cm pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Vegetable broth - 400ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the fresh green beans to the saucepan and cook for another 2-3 minutes, stirring occasionally.
  4. Stir in the rinsed jasmine rice, salt, and black pepper, mixing well to combine all ingredients.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon juice before serving.
