- Jasmine rice - 150g
- Fresh green beans - 100g, trimmed and cut into 2 cm pieces
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Vegetable broth - 400ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the fresh green beans to the saucepan and cook for another 2-3 minutes, stirring occasionally.
- Stir in the rinsed jasmine rice, salt, and black pepper, mixing well to combine all ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon juice before serving.
