- Ripe tomatoes - 300 grams, diced

- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1 small, chopped
- Fresh parsley - 2 tablespoons, chopped
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the diced tomatoes and chopped red bell pepper to the pan. Cook for another 5 minutes until the tomatoes break down and become saucy.
- Stir in the rice, bay leaf, salt, and black pepper, mixing everything well.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the fresh parsley before serving.
