Ingredients

  • Ripe tomatoes - 300 grams, diced

  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 small, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Add the diced tomatoes and chopped red bell pepper to the pan. Cook for another 5 minutes until the tomatoes break down and become saucy.
  3. Stir in the rice, bay leaf, salt, and black pepper, mixing everything well.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  5. Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the fresh parsley before serving.
