Ingredients

  • Quinoa - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, diced
  • Corn - 100 grams (fresh or frozen)
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Rinse the quinoa under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they become translucent.
  3. Add the diced bell pepper, carrot, and tomato to the saucepan, cooking for about 5 minutes until the vegetables soften.
  4. Stir in the corn and cook for another 2 minutes.
  5. Add the rinsed quinoa, water, salt, black pepper, cumin, and paprika to the saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water has been absorbed.
  6. Remove from heat, fluff the quinoa with a fork, and stir in the chopped cilantro and lime juice.
  7. Let it sit for a few minutes before serving. Adjust seasoning if needed and enjoy your Arroz de Quinoa!
