  • Cream cheese - 100 grams
  • Parmesan cheese - 50 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Butter - 30 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chives - 2 tablespoons, chopped (for garnish)

Steps

  1. Begin by ricing the cauliflower using a food processor or box grater until it resembles rice grains.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes.
  3. Add the riced cauliflower to the skillet, stirring well to combine with the onion and garlic. Cook for 5-7 minutes until the cauliflower is tender.
  4. Reduce the heat to low and add the cream cheese, stirring until melted and well incorporated into the cauliflower.
  5. Add the grated Parmesan and shredded mozzarella cheese, mixing until everything is creamy and heated through. Season with salt and black pepper to taste.
  6. Remove from heat and let it sit for a couple of minutes to thicken slightly before serving.
  7. Plate the Arroz de Queijo and garnish with chopped chives before serving.
