Ingredients

  • Brown rice - 150 grams
  • Chicken breast, diced - 200 grams
  • Red bell pepper, diced - 1 medium
  • Green bell pepper, diced - 1 medium
  • Onion, chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Cilantro, chopped - 2 tablespoons
  • Jalapeño, diced - 1 small (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and cook until browned, about 5-7 minutes.
  3. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent, about 3 minutes.
  4. Stir in the diced red and green bell peppers, and jalapeño if using, and cook for another 5 minutes until the peppers are tender.
  5. Drain the rice and add it to the skillet, stirring to combine with the vegetables and chicken.
  6. Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
  7. Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat, fluff the rice with a fork, and stir in the chopped cilantro before serving.
