- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml (or water)
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then grate it using a box grater or pulse in a food processor until it resembles rice grains.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced red and yellow bell peppers to the skillet and cook for another 5 minutes, stirring occasionally until they soften.
- Stir in the grated cauliflower rice, vegetable broth, salt, and black pepper. Mix well to combine all the ingredients.
- Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender and has absorbed the flavors.
- Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve warm.
