  • Vegetable broth - 200 ml (or water)
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then grate it using a box grater or pulse in a food processor until it resembles rice grains.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced red and yellow bell peppers to the skillet and cook for another 5 minutes, stirring occasionally until they soften.
  4. Stir in the grated cauliflower rice, vegetable broth, salt, and black pepper. Mix well to combine all the ingredients.
  5. Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender and has absorbed the flavors.
  6. Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve warm.
