- Garlic - 2 cloves, minced
- Bell pepper (red or yellow) - 1, diced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Salt - to taste
- Black pepper - to taste
- Lime - 1, cut into wedges (for serving)
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the diced bell pepper and cook for another 2-3 minutes until softened.
- Add the diced tomato and cook for an additional 2 minutes, allowing the mixture to meld together.
- Add the rice to the pan, stirring well to coat it with the vegetable mixture.
- Pour in the vegetable broth and add the pequi. Bring to a boil, then reduce the heat to low.
- Cover and let the rice simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and fluff the rice with a fork. Stir in the chopped cilantro and season with salt and black pepper to taste.
- Serve hot, garnished with lime wedges on the side.
