  • Water - 400ml
  • Coconut milk - 100ml
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1 small, diced
  • Tomato - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Green peas - 50g
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Smoked paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  2. Add the diced bell pepper, carrot, and chopped tomato to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the basmati rice, smoked paprika, turmeric powder, salt, and black pepper. Cook for 2 minutes to toast the rice slightly.
  4. Pour in the water and coconut milk, then bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  5. Once cooked, remove from heat and fluff the rice with a fork. Stir in the green peas, chopped parsley, and lemon juice. Let it sit covered for an additional 5 minutes before serving.
