- Coconut milk - 100ml
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1 small, diced
- Tomato - 1 medium, chopped
- Carrot - 1 medium, diced
- Green peas - 50g
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Smoked paprika - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
Steps
- In a medium pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced bell pepper, carrot, and chopped tomato to the pot. Cook for about 5 minutes, stirring occasionally.
- Stir in the basmati rice, smoked paprika, turmeric powder, salt, and black pepper. Cook for 2 minutes to toast the rice slightly.
- Pour in the water and coconut milk, then bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and fluff the rice with a fork. Stir in the green peas, chopped parsley, and lemon juice. Let it sit covered for an additional 5 minutes before serving.
