Steps
- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the diced bell pepper and tomato to the saucepan, cooking for an additional 3-4 minutes until softened.
- Stir in the paprika, salt, and black pepper, mixing well with the vegetables.
- Add the basmati rice to the pan, stirring to coat the rice in the vegetable mixture.
- Pour in the fish stock and coconut milk, bringing the mixture to a gentle boil. Reduce heat to low, cover, and simmer for 15 minutes.
- While the rice cooks, season the fish fillets with salt, black pepper, and lime juice.
- After the rice has simmered for 15 minutes, place the seasoned fish fillets on top of the rice. Cover again and cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
- Once cooked, remove from heat and gently fluff the rice. Stir in the chopped cilantro before serving.
