  • Basmati rice - 150 grams

  • Garlic - 2 cloves, minced
  • Bell pepper (red or yellow) - 1, diced
  • Tomato - 1 medium, diced
  • Coconut milk - 200 ml
  • Fish stock - 250 ml
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the diced bell pepper and tomato to the saucepan, cooking for an additional 3-4 minutes until softened.
  3. Stir in the paprika, salt, and black pepper, mixing well with the vegetables.
  4. Add the basmati rice to the pan, stirring to coat the rice in the vegetable mixture.
  5. Pour in the fish stock and coconut milk, bringing the mixture to a gentle boil. Reduce heat to low, cover, and simmer for 15 minutes.
  6. While the rice cooks, season the fish fillets with salt, black pepper, and lime juice.
  7. After the rice has simmered for 15 minutes, place the seasoned fish fillets on top of the rice. Cover again and cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
  8. Once cooked, remove from heat and gently fluff the rice. Stir in the chopped cilantro before serving.
