- Green peas - 100 grams, frozen
- Tomato paste - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
- Add the diced red bell pepper, carrot, and zucchini to the pan. Cook for another 5-7 minutes until the vegetables are slightly softened.
- Stir in the Arborio rice, ensuring it is well coated with the oil and mixed with the vegetables. Cook for 2-3 minutes until the rice is slightly translucent.
- Add the tomato paste, smoked paprika, bay leaf, and vegetable broth to the pan. Season with salt and black pepper to taste. Bring to a boil.
- Reduce the heat to low, cover the pan, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
- Stir in the frozen green peas and cook for an additional 5 minutes, allowing the peas to heat through.
- Remove from heat, discard the bay leaf, and let the dish sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve hot.
