Ingredients

  • Duck legs - 2 pieces (approximately 400g)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Rice - 150g (about ¾ cup)
  • Chicken broth - 500ml
  • Bay leaves - 2
  • Paprika - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Salt - to taste
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a large pot, heat olive oil over medium heat. Add the duck legs and brown them on all sides, about 5-7 minutes.
  2. Remove the duck legs and set aside. In the same pot, add chopped onion, garlic, bell pepper, and carrot. Sauté until softened, about 5 minutes.
  3. Add the rice to the pot and stir for 1-2 minutes to toast it slightly.
  4. Pour in the chicken broth, then add the duck legs back to the pot along with bay leaves, paprika, black pepper, and salt. Bring to a boil.
  5. Reduce heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the rice is fully cooked and has absorbed the liquid.
  6. Once cooked, remove the duck legs, shred the meat, and mix it back into the rice. Discard the bay leaves.
  7. Serve hot, garnished with fresh parsley.
