- Duck legs - 2 pieces (approximately 400g)
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1, diced
- Carrot - 1 medium, diced
- Rice - 150g (about ¾ cup)
- Chicken broth - 500ml
- Bay leaves - 2
- Paprika - 1 teaspoon
- Black pepper - ½ teaspoon
- Salt - to taste
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- In a large pot, heat olive oil over medium heat. Add the duck legs and brown them on all sides, about 5-7 minutes.
- Remove the duck legs and set aside. In the same pot, add chopped onion, garlic, bell pepper, and carrot. Sauté until softened, about 5 minutes.
- Add the rice to the pot and stir for 1-2 minutes to toast it slightly.
- Pour in the chicken broth, then add the duck legs back to the pot along with bay leaves, paprika, black pepper, and salt. Bring to a boil.
- Reduce heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Once cooked, remove the duck legs, shred the meat, and mix it back into the rice. Discard the bay leaves.
- Serve hot, garnished with fresh parsley.
