- Hearts of palm - 100 grams, sliced
- Vegetable broth - 500 milliliters
- Peas - 50 grams (fresh or frozen)
- Corn - 50 grams (fresh or frozen)
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the coconut oil over medium heat.
- Add the diced onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the diced bell pepper and tomato, cooking for an additional 3-4 minutes until softened.
- Add the Arborio rice to the pan, stirring well to coat the grains with the oil and vegetables.
- Pour in the vegetable broth and add the sliced hearts of palm, peas, corn, paprika, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Remove from heat, let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, adjust seasoning if necessary, and garnish with fresh parsley before serving.
