Ingredients

  • Arborio rice - 150 grams

  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Hearts of palm - 100 grams, sliced
  • Vegetable broth - 500 milliliters
  • Peas - 50 grams (fresh or frozen)
  • Corn - 50 grams (fresh or frozen)
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the coconut oil over medium heat.
  2. Add the diced onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced bell pepper and tomato, cooking for an additional 3-4 minutes until softened.
  4. Add the Arborio rice to the pan, stirring well to coat the grains with the oil and vegetables.
  5. Pour in the vegetable broth and add the sliced hearts of palm, peas, corn, paprika, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  7. Remove from heat, let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, adjust seasoning if necessary, and garnish with fresh parsley before serving.
