Steps
- Rinse the brown rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed brown rice and cook for 2 minutes, ensuring the rice is well-coated with the oil.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and has absorbed the liquid.
- Once the rice is cooked, add the sweet corn, chopped parsley, salt, and black pepper. Stir gently to combine and heat through for another 2-3 minutes.
