  • Red bell pepper - 1, diced
  • Green peas - 100 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 3-4 minutes.
  3. Add the diced red bell pepper to the saucepan and cook for an additional 2-3 minutes.
  4. Stir in the rinsed rice, ensuring it is well-coated in the oil and mixed with the vegetables.
  5. Pour in the vegetable broth and add the passion fruit pulp. Stir to combine, and season with salt and black pepper to taste.
  6. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the saucepan and let it simmer for 15-18 minutes, or until the rice is cooked and liquid is absorbed.
  7. Once cooked, remove the saucepan from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, then gently fold in the green peas and chopped cilantro before serving.
