- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Green peas - 100 grams
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 3-4 minutes.
- Add the diced red bell pepper to the saucepan and cook for an additional 2-3 minutes.
- Stir in the rinsed rice, ensuring it is well-coated in the oil and mixed with the vegetables.
- Pour in the vegetable broth and add the passion fruit pulp. Stir to combine, and season with salt and black pepper to taste.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover the saucepan and let it simmer for 15-18 minutes, or until the rice is cooked and liquid is absorbed.
- Once cooked, remove the saucepan from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, then gently fold in the green peas and chopped cilantro before serving.
