Ingredients

  • Long-grain rice - 150 grams
  • Linguiça sausage (smoked or fresh) - 200 grams, sliced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper (red or yellow) - 1, diced
  • Chicken broth - 400 ml
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the sliced linguiça sausage and cook until browned, about 5-7 minutes.
  3. Remove the sausage from the pan and set aside, leaving the drippings in the pan.
  4. In the same pan, add the chopped onion and cook until softened, about 3 minutes.
  5. Stir in the minced garlic and diced bell pepper, cooking for another 2 minutes until fragrant.
  6. Add the rice to the pan, stirring to coat with the oil and vegetables, and toast for about 2 minutes.
  7. Pour in the chicken broth and bring to a boil.
  8. Reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  9. Once done, fluff the rice with a fork and stir in the cooked linguiça sausage and chopped parsley.
  10. Season with salt and black pepper to taste before serving.
