- Coconut milk - 200 ml
- Water - 200 ml
- Coconut oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cinnamon - 1/4 teaspoon
- Nutmeg - a pinch
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the coconut oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
- Add the rinsed rice to the saucepan, stirring for about 2 minutes to toast the rice slightly.
- Pour in the coconut milk and water, then add the salt, black pepper, cinnamon, and nutmeg. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
