Ingredients

  • Basmati rice - 100 grams
  • Coconut milk - 200 ml
  • Water - 200 ml
  • Coconut oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Nutmeg - a pinch
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the coconut oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
  3. Add the rinsed rice to the saucepan, stirring for about 2 minutes to toast the rice slightly.
  4. Pour in the coconut milk and water, then add the salt, black pepper, cinnamon, and nutmeg. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
