Ingredients

  • Jacked young green jackfruit - 200 grams, shredded
  • Brown rice - 150 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 300 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Green peas - 100 grams, fresh or frozen
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced red bell pepper, cooking for an additional 3-4 minutes until the peppers soften.
  3. Stir in the shredded jackfruit, cumin, paprika, turmeric, salt, and black pepper. Cook for another 5 minutes, allowing the jackfruit to absorb the flavors.
  4. Add the brown rice to the pot and stir well to combine with the vegetable mixture.
  5. Pour in the vegetable broth and coconut milk. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  6. Simmer for about 25-30 minutes, or until the rice is cooked and has absorbed the liquid. Stir occasionally to prevent sticking.
  7. Once the rice is cooked, add the green peas and stir to combine. Allow to cook for an additional 2-3 minutes until the peas are heated through.
  8. Remove from heat, garnish with fresh cilantro, and serve warm.
