Ingredients

  • Basmati rice - 150 grams
  • Coconut milk - 200 milliliters
  • Vegetable broth - 200 milliliters
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Green peas - 100 grams, frozen
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced red bell pepper, cumin, turmeric, salt, and black pepper. Cook for another 2-3 minutes until the peppers soften.
  4. Stir in the rinsed rice and cook for 1-2 minutes, allowing the rice to toast slightly.
  5. Pour in the coconut milk and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
  6. In the last 5 minutes of cooking, add the frozen green peas and stir gently.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh cilantro and serve warm.
