- Basmati rice - 150 grams
- Coconut milk - 200 milliliters
- Vegetable broth - 200 milliliters
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Green peas - 100 grams, frozen
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced red bell pepper, cumin, turmeric, salt, and black pepper. Cook for another 2-3 minutes until the peppers soften.
- Stir in the rinsed rice and cook for 1-2 minutes, allowing the rice to toast slightly.
- Pour in the coconut milk and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
- In the last 5 minutes of cooking, add the frozen green peas and stir gently.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve warm.
