  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Vegetable broth - 2 cups (480ml)
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Carrot - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes.
  2. Add the diced carrot and bell pepper, and sauté for another 5 minutes until they start to soften.
  3. Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the tomatoes break down slightly.
  4. Add the basmati rice and chickpeas to the pot, stirring well to combine with the vegetables and spices.
  5. Pour in the vegetable broth, bringing the mixture to a gentle boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
