- Vegetable broth - 2 cups (480ml)
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Carrot - 1 medium, diced
- Bell pepper - 1/2, diced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper, and sauté for another 5 minutes until they start to soften.
- Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the tomatoes break down slightly.
- Add the basmati rice and chickpeas to the pot, stirring well to combine with the vegetables and spices.
- Pour in the vegetable broth, bringing the mixture to a gentle boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
