- Fresh Spinach - 200 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive Oil - 2 tablespoons
- Chicken or Vegetable Broth - 200 ml
- Parmesan Cheese - 50 grams, grated
- Salt - to taste
- Black Pepper - to taste
- Nutmeg - a pinch
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
- Add the cauliflower rice to the skillet, stirring well to combine with the onion and garlic. Cook for about 5 minutes until slightly tender.
- Pour in the chicken or vegetable broth and bring to a simmer. Cook for another 5 minutes until the broth is mostly absorbed.
- Stir in the fresh spinach, allowing it to wilt, which should take about 2-3 minutes.
- Season the mixture with salt, black pepper, and a pinch of nutmeg. Mix well.
- Remove the skillet from heat and stir in the grated Parmesan cheese until melted and evenly distributed.
- Serve warm, garnished with additional Parmesan if desired.
