  • Fresh Spinach - 200 grams

  • Garlic - 2 cloves, minced
  • Olive Oil - 2 tablespoons
  • Chicken or Vegetable Broth - 200 ml
  • Parmesan Cheese - 50 grams, grated
  • Salt - to taste
  • Black Pepper - to taste
  • Nutmeg - a pinch

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  2. Add the cauliflower rice to the skillet, stirring well to combine with the onion and garlic. Cook for about 5 minutes until slightly tender.
  3. Pour in the chicken or vegetable broth and bring to a simmer. Cook for another 5 minutes until the broth is mostly absorbed.
  4. Stir in the fresh spinach, allowing it to wilt, which should take about 2-3 minutes.
  5. Season the mixture with salt, black pepper, and a pinch of nutmeg. Mix well.
  6. Remove the skillet from heat and stir in the grated Parmesan cheese until melted and evenly distributed.
  7. Serve warm, garnished with additional Parmesan if desired.
