  • Carrot - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Beef broth - 2 cups (500 ml)
  • Bay leaves - 2
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
  2. Add the beef ribs to the pot and sear on all sides until browned.
  3. Stir in the diced tomato, bell pepper, and carrot, cooking for about 5 minutes until softened.
  4. Add the rice, bay leaves, paprika, cumin, salt, and black pepper. Stir well to combine all ingredients.
  5. Pour in the beef broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the rice is cooked and the beef is tender.
  6. Remove the bay leaves, fluff the rice with a fork, and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
