Ingredients
- Basmati rice - 150 grams
- Lamb shoulder, diced - 300 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 3 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Tomato, chopped - 1 medium
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Bay leaf - 1
- Chicken broth - 400 ml
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large pan over medium heat. Add the diced lamb and brown it on all sides for about 5-7 minutes. Remove the lamb and set aside.
- In the same pan, add the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the pan, cooking for another 5 minutes until they begin to soften.
- Stir in the chopped tomato, cumin, paprika, bay leaf, salt, and black pepper. Cook for 2-3 minutes until the tomatoes break down slightly.
- Return the browned lamb to the pan, and add the rice, stirring well to coat it with the mixture.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, mix in the chopped parsley, and serve.
