Ingredients

  • Basmati rice - 150 grams
  • Lamb shoulder, diced - 300 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Tomato, chopped - 1 medium
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Bay leaf - 1
  • Chicken broth - 400 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large pan over medium heat. Add the diced lamb and brown it on all sides for about 5-7 minutes. Remove the lamb and set aside.
  2. In the same pan, add the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.
  3. Add the diced carrot and bell pepper to the pan, cooking for another 5 minutes until they begin to soften.
  4. Stir in the chopped tomato, cumin, paprika, bay leaf, salt, and black pepper. Cook for 2-3 minutes until the tomatoes break down slightly.
  5. Return the browned lamb to the pan, and add the rice, stirring well to coat it with the mixture.
  6. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, mix in the chopped parsley, and serve.
